Ingredients: Dough: 15 pounds smead 7 1/2 pounds lightly salted butter 7 cups milk 2 tablespoons mahleb (ground), Dates: 7 pounds dates, Nuts: 5 pounds chopped nuts (walnuts or pistachio). |

Method: Dough: 2 nights before Mix smead and mahleb together in large container. Melt butter and let cool to warm. Add to smead while mixing with hands. Mix well and cover with towel to sit overnight. Next morning Break up smead with end of wooden spoon. Heat milk and add to smead while mixing. Work just enough to get rid of lumps. Cover and let sit for 1 hour. Put in ziplocks and refrigerate. Preparation of dates: Grind dates in meat grinder. With oiled hands, roll out into long thin rolls. Wind into circle, oiling each layer and covering with plastic wrap. Preparation of Nuts: Chop nuts. Add sugar, honey & rose water to taste Assembly of Cookies (Ka3k): Break off small piece of chilled dough and flatten into rectangle. lay piece of date on top and roll dough around. Join ends to make a circle. Pinch for decoration. (ma'mool) Make dough ball. Hollow out with finger. Spoon nuts into opening and pinch closed. Pinch for decoration. Baking: Bake cookies at 325-350. Sprinkle with powdered suguar. |
